A single cask Caol Ila bottled by the Thompson Bros from Dornoch. Aged in a refill American oak hogshead. Only 338 bottles were drawn. Caol Ila, whose name derives from the Gaelic for ‘Sound of Islay’. It was founded to the North of Islay in 1846. The distillery draws its water that travel through limestone and peat before reaching their beneficiary. On the nose is peat, mossy, vegetal and ash. The palate offer notes of Coal soap, salty banana fritters and peated lemon puffs. The long finish with slight liquorice and burnt sugar.
