Description

This cognac is made from Folle Blanche, Colombard and Ugni Blanc grapes of the 2011, 2012, 2013 and 2014 (10%) vintages from a single Grande Champagne estate. Cognac is generally made from a single grape variety, the Ugni Blanc (almost 98% of all production), but others are sometimes blended at the wine stage after picking or during vinification. More rarely, varieties are blended at the eau-de-vie stage but, in this case, each one is vinified, distilled and aged separately. We tried both these blending methods but were satisfied with neither. The wine blends were dominated by the rustic and powerful Colombard grape. The eau-de-vie blends failed to preserve the delicate aromas of the Folle Blanche which was overpowered by the other two varieties. So we turned to the past and contemplated what distillers did when they grew many grape varieties with different maturities and distilled the grapes in 3, 5 or 7 hectolitre stills. The modern single variety trend didn’t exist then. Logically they had to harvest and vinify the grapes as they ripened and begin the first distillation barrel by barrel according to fermentation. The spirit obtained from this first distillation (of each variety), known as the brouillis, was then blended at 28% to 30% ABV and the second distillation, or bonne chauffe, launched. We have revived this traditional method which is much more complex than producing a simple single variety cognac. Naturally the percentage of each grape variety changes each year. The eau-de-vie produced is then cask-aged in  Jean Grosperrin Cognac's cellars, vintage after vintage, before the individual vintages are blended.

Light colour. Vibrant grape, butter and linden honey aromas on the nose. Supple soft texture with notes of vine flower, apple and spice. Beautiful freshness. A rich well-balanced finish. Finally a truly unique blend combining the intensity of the Colombard, the finesse of the Folle Blanche and the structure of the Ugni Blanc!
